Serves 6

Ingredients :

¹⁄₃ cup fat-free milk

¼ cup diced pimiento

½ teaspoon cumin

1 small eggplant, cubed

4 ounces (113 g) diced green chilies

3 cups cooked brown rice

1 cup shredded reduced-fat Cheddar cheese, divided

½ cup egg whites

1 bunch fresh cilantro, finely chopped

Cooking spray

Directions :

1. Spray a muffin pan with 12 cups with cooking spray.
2. In a large bowl, combine all of the ingredients with the exception of 12 cup of the cheese.
3. Distribute the mixture evenly among the muffin cups, then top with the remaining 12 cup of cheese.
4. Place the muffin pan in Rack Position 1, select Convection Bake, set the temperature to 400 degrees
Fahrenheit (205 degrees Celsius), and set the timer for 14 minutes.
5. When cooking is complete, remove the quiches from the oven and inspect them. They must be fixed.
6. Transfer the quiches to a platter with care and serve immediately
